Beef Fajita Skewers
Contributed by Jerry Lyttle of St. Clair Shores, MI
Directions: Thread beef cubes onto 8 skewers; thread peppers and onions onto remaining skewers. Combine lime juice and salad dressing; brush over skewers. Grill over hot coals or on a medium-hot grill, turning occasionally, 7 to 9 minutes for beef and 12 to 15 minutes for vegetables. Sprinkle with salt to taste.
Makes 8 servings.
Serve with warmed flour tortillas, sour cream and salsa…a clever new way to enjoy a Mexican restaurant favorite.
Ingredients: 2 lbs. boneless beef top sirloin, sliced into 1-inch cubes 16 wooden skewers, soaked in water 2 green peppers, cut into wedges 2 red or yellow peppers, cut into wedges 4 onions, cut into wedges 6 T. lime juice 3/4 c. Italian salad dressing salt to taste
